This delicious and healthy slice is a great way to increase your vegetable intake. It can be served for brunch, lunch or as a side at dinner. It is low FODMAP and can be made gluten and lactose free. Enjoy!

Health benefits
A diet high in different types of vegetables can reduce the risk of cancer, cardiovascular disease and diabetes. This slice contains red capsicum (a fruit) and three vegetables, with surprising benefits:
Red capsicums contain lycopene, an antioxidant that reduces cancer risk and maintains a healthy heart.
Sweet potatoes and carrots have betacarotene, which converts to vitamin A, to maintain healthy mucous membranes and eyes.
Zucchini is full of fibre for gastrointestinal health and high levels of magnesium for maintaining blood pressure.
