This veggie stir fry is a hit with the family

Cooking Time: 15 minutes
Serves: 4
Ingredients
Olive oil
1 medium eggplant, cut into cubes
1 zucchini, cut into cubes
1 red capsicum, sliced
1 cup green beans, sliced
2 tablespoons oyster sauce or tamari sauce
2 garlic cloves, crushed (exclude if low FODMAP)
1 chilli, finely cut (optional)
White pepper, to season (optional)
White sesame seeds, to sprinkle
Black chia seeds, to sprinkle
Jasmine rice, to serve

Eggplant, zucchini and capsicum are a tasty stir fry combination
Method
In a hot frypan or wok, add 1 teaspoon of olive oil and stir fry the garlic and chilli until fragrant, about 1 minute.
Add the eggplant and stir fry for 2 minutes.
Add the zucchini, oyster sauce or tamari sauce and stir fry for 2 minutes.

The eggplant and zucchini will absorb the flavours
Add the capsicum and green beans and stir fry for 1 minute.

The capsicum and green beans will be a bit crunchy and taste delicious
Season with white pepper and place in bowls with jasmine rice. Sprinkle sesame and black chia seeds on top and serve.
