What is your must have salad ingredient?

Do you have a favourite ingredient that you MUST add to any and all salads you make? How did it become a "must have" - for taste or health purposes?

Extra Virgin Olive Oil.

A drizzle of premium olive oil is a must on any salad dressing irrespective of what the other salad ingredients are. It lifts the entire taste of the salad. A little oil goes a long way in flavour.
Personally I believe that if a salad doesn't have avocado in it, it's not worth having!! Such a simple ingredient - easy to prepare, nutritious, versatile. LOVE it!
Probably carrot, I love the crunch of carrot in salads
How do you prepare your carrots? Do you grate them or julienne them or just chop into small pieces?

Nuts or seeds - I love a crunchy element in a salad!
I used to add nuts all the time - But I stopped when I had the kids because they are a choking hazard and they always want the exact same things as I have! Now that they are a bit older I've started adding some nuts back in occasionally. I love almonds and also pine nuts for salads - Do you have a favourite?

Toasted sunflower and pepita seeds are fabulous! All kinds of nuts, depends on the salad and which will complement it the best. :)

I use Himalayan Pink Salt. It is quite different to normal salt and a good quality olive oil or Flaxseed oil.
Either balsamic vinegar or cheer tomatoes. Cherry tomatoes are great for adding both colour and flavour and balsamic vinegar is kind of a guilty pleasure as I like it in abundance.
