Wild rocket green salad with dukkah

Wild rocket is a powerhouse food packed full of essential vitamins and minerals. Best eaten raw it is commonly used in salads and has a cleansing and detoxifying effect within the body. This gorgeous salad is incredibly easy to prepare and will be soon be a favourite with family and friends.

Ingredients
500gm rocket leaves
2 tablespoons dukkah*
1 avocado
1 cucumber

Dressing^
1 tablespoon extra virgin olive oil
1 tablespoon natural yoghurt
1 tablespoon lemon juice
Salt and pepper

Method
Whisk dressing ingredients in a salad bowl.

Dice avocado and cut cucumber into thick matchsticks.

Add rocket and cucumber to the bowl and toss with the dressing.

Add the avocado and gently toss.

Serve with a generous sprinkling of Dukkah.

Dukkah is an Egyptian delight made from ground nuts, herbs and spices, available at delis and supermarkets.
^ For a vegan dressing use olive oil, lemon juice and wholegrain mustard.
