Zucchini: a complete guide

Did you know the humble zucchini is actually a fruit?

Also known as 'courgette' in some parts of the world, zucchini is an abundantly nutritious squash, and impressively versatile.

You may find it in dark green, light green, or yellow varieties, and may resemble anything from a cucumber to a bottle in shape.

Health benefits
Good source of vitamin C, boosting immunity and promoting healthy skin.
Good source of copper, which builds strong bodily tissue.
Good source of manganese, aiding healthy bone production.
Good source of potassium, naturally lowering blood pressure.
Low in calories and with a very low GI, zucchini is a great addition to any balanced diet.

How to use
Grate raw and mix into a fresh vegetable salad.
Chopped into sticks and enjoyed with hummus, guacamole or other healthy condiments.
Slice fine or in thick wedges and roast with oil and herbs as you would potato chips.
Add to stews, curries, soups and savoury pies for additional bulk and nutrition.
Spiralise and use instead of wheat spaghetti or pasta, topped with a fresh pesto.
Mix into cakes, brownies, muffins and breads for a subtle sweet taste and extra veggie goodness!
