5 a day bolognese
I created this bolognese to get veggies into my fussy kids (and fiancé!). It went down really well and is so quick and easy. It's full of good fats, protein and veggies, and if you're not a carboholic makes a complete meal that is totally paleo friendly!
If you feel you need a side with your bolognese it would go really well with sweet potato or parsnip chips, you could put it in lettuce or cabbage leaves to make tacos, add spices to make a chilli, or make courgette 'spaghetti'; really it makes a great base for all your mince based meals.
So here it is!
5 a day bolognese
Ingredients
1-2 tablespoons ghee (see my other posts for recipe)
1 onion sliced to your preferred thickness
2 garlic cloves finely sliced or minced
1 red pepper diced
1 yellow pepper diced
1 courgette grated
2 carrots grated
600g beef mince
500mls passata
1-2 tablespoons dried oregano
1-2 splashes of balsamic vinegar
2 tablespoons tomato purée
Salt and pepper to taste
Method
Gently fry garlic and onion in ghee until softened. *Add peppers (if you prefer your peppers to keep their crunch add towards the end of cooking) and stir in for a minute.
Add beef mince, breaking it up and keep stirring until mostly browned.
Add the rest of the veggies and stir in for a minute or two. Add passata, tomato purée and oregano and bring to a simmer (add peppers now if you want them crunchy).
Slowly add balsamic vinegar to taste, this gives a lovely tang if you add the right amount! Go steady unless you like a sharper taste.
Add salt and pepper to taste and serve!
