Blueberry Bliss Smoothie
This smoothie recipe is one of my favourites - it's simple, nutritious and a great way to start the day. Blueberries are a great source of Vitamin C, manganese, dietary fibre, and phytonutrients which act as anti-oxidants. Cashews provide our body with protein, anti-oxidants, iron, magnesium, Vitamin B6 and healthy fats; they also give the smoothie a delicious creaminess.
Ingredients
1 punnet of fresh blueberries
1/2 cup cashews or cashew pieces
1/3 teaspoon mixed spice or ground cinnamon
1 cup water
1/2 teaspoon each of flaxseed oil and hemp oil (optional)
Method
Add all ingredients to the blender and mix well until consistency is smooth.
Tips
If you prefer it a little sweeter add one fresh, pitted date soaked for a minute or two in hot water to soften it.
You can substitute the water for milk of your choice but it isn't necessary and will add unwanted calories.
I use flaxseed and hemp oil to get essential omega fatty acids as I don't eat seafood.
Cashew pieces are cheaper to buy than whole cashews - anywhere you can buy bulk foods you should be able to get them, even my local Coles has them now.
