Cauliflower Steaks
Cruciferous vegetables, including cauliflower, are excellent for heart health. Cauliflower is a good source of B vitamins and omega-3 fatty acid which can prevent health issues that lead to cardiovascular disease. Cauliflower is also important for digestion since the vegetable contains over 3 grams of fibre per cooked cup; and it contains vitamin C that supports the immune system.
There are many ways to cook cauliflower. By roasting cauliflower you can bring out its natural sweetness. Roasted, the vegetable becomes tender and buttery. Roasted cauliflower could be served warm or at room temperature.
Preparation time: 10 minutes
Cooking time: 30-40 minutes
Makes: 2-3 servings
Ingredients:
1 large cauliflower
1 tablespoon olive oil
1 teaspoon ground turmeric
2 tablespoons unsweetened shredded coconut
Sea salt and freshly ground black pepper to taste
Method:
Preheat the oven to 180°C.
Remove the outer leaves from the cauliflower, place it on its base on a sturdy chopping board, than cut it in half down the middle.
Cut a slice 1.5-2 cm thick from each half of the cauliflower. Cut another two slices and two more, if your cauliflower is large enough.
Rub the olive oil on both sides of the cauliflower steaks. Then sprinkle over the turmeric and rub it in. Add salt and pepper.
Place the steaks on a baking sheet lined with parchment paper and sprinkle over the shredded coconut.
Bake for 30-40 minutes, flipping them over halfway, until cooked through.
