Chia Seed Pancakes

These pancakes are a great reason to wake up for breakfast, don't you think?



Ingredients

300ml of almond milk
300g of spelt flour
1 tablespoon of chia seeds
1 teaspoon of poppy seeds
1/4 teaspoon of baking soda
1/4 teaspoon of salt
2 tablespoons of brown sugar
1 egg
The juice from 1/2 a lemon

Method

  • Every ingredient has to be at room temperature in order to get fluffy and delicious pancakes. In a big bowl add the flour, sugar, baking soda, poppy and chia seeds and salt.
  • In a smaller bowl, add the milk and the lemon juice and let the mixture sit for 10 minutes. After 10 minutes add the egg and stir.
  • Add the egg mixture to the flour and whisk until everything is well incorporated.
  • Prepare a big pan on high heat with a drop of oil.
  • Add 2 or 3 pancakes to the pan and reduce the heat to medium. After 2 minutes on one side, turn them over and cook them for 1 more minute.



  • Plate 2-3 pancakes on a serving plate and serve with some fruits and agave on top. They’re delicious, especially with a cup of tea or coffee. :)
