Chia Seed Pancakes
These pancakes are a great reason to wake up for breakfast, don't you think?
Ingredients
300ml of almond milk
300g of spelt flour
1 tablespoon of chia seeds
1 teaspoon of poppy seeds
1/4 teaspoon of baking soda
1/4 teaspoon of salt
2 tablespoons of brown sugar
1 egg
The juice from 1/2 a lemon
Method
Every ingredient has to be at room temperature in order to get fluffy and delicious pancakes. In a big bowl add the flour, sugar, baking soda, poppy and chia seeds and salt.
In a smaller bowl, add the milk and the lemon juice and let the mixture sit for 10 minutes. After 10 minutes add the egg and stir.
Add the egg mixture to the flour and whisk until everything is well incorporated.
Prepare a big pan on high heat with a drop of oil.
Add 2 or 3 pancakes to the pan and reduce the heat to medium. After 2 minutes on one side, turn them over and cook them for 1 more minute.
Plate 2-3 pancakes on a serving plate and serve with some fruits and agave on top. They’re delicious, especially with a cup of tea or coffee. :)
