Coconut Cacao Balls Recipe
These delicious little balls of chocolatey goodness are not only gluten and dairy free, they're packed full of protein, fibre, anti-oxidants, and vital nutrients including essential omega 3 fatty acids, Vitamin E, iron, zinc, calcium and magnesium. They're super simple to make, and can be kept in the fridge or freezer for times when you have those sweet cravings but don't want to blow out your diet or binge on processed sugar and fat laden treats. They're also a popular party pleaser.
Ingredients
3 tablespoons raw cacao powder
3 tablespoons LSA
2 tablespoons sunflower seeds
1 tablespoon cashews
1 teaspoon chia seeds
1 heaped tablespoon honey
1 tablespoon coconut oil
1 teaspoon vanilla extract
2 fresh pitted dates soaked in hot water for a couple of minutes
Shredded coconut flakes
Method
Throw everything (except the shredded coconut) into a food processor and mix until it all comes together.
Simply throw it all in

Use your hands to roll the mixture into small balls.
Roll each ball in the shredded coconut until coated.

Refrigerate and they will solidify beautifully.

Tips
If your mixture doesn't come together, add some more honey to help bind it.
If your mixture is too sticky put it into the fridge for half an hour and it should be easier to handle.
The mixture is easier to roll if your hands are wet or lightly oiled.
You can play around with flavours adding things like peppermint oil, cinnamon powder or mixed spice.
