Cucumber sushi with ginger and chilli soy sauce
This modern take on sushi is tasty, versatile and quick to make. I have added chicken but you can add another protein or make it vegetarian to suit your tastebuds.
It makes a great healthy platter to serve at parties and is a good alternative to sandwiches in lunchboxes.

Serves: 4
Ingredients
2 continental cucumbers
1 capsicum finely sliced
1 carrot, finely sliced
1/4 lettuce, finely sliced
1/4 cucumber, finely sliced
1 cooked chicken breast, thinly sliced
1/4 cup soy sauce
2 birdseye chilli, cut finely
1 teaspoon grated ginger
Method
Cut cucumber into 4cm sections.
Use a small spoon to remove the centres so that there is a hollow.

Toss the finely sliced vegetables to combine.

Gently fill the cucumbers with the lettuce, vegetable mix and chicken.
Stir the chilli, ginger and soy sauce.
Serve and enjoy!
