Dark chocolate covered rice cakes
I got totally hooked on these tasty little treats while living in the UK some years ago, where they sell them in the supermarket. I recently saw them in an Australian health food store at the exorbitant price of $5 for six rice crackers - so I created my own cheaper, and no doubt, healthier version.
Ingredients
1 packet of thin rice cakes (I used the brown rice ones)
100gm dark chocolate (I used Lindt 70%)
1 small tablespoon butter
Method
Spread the rice cakes out on a large cutting board or tray in preparation.
Melt the chocolate and butter in a double boiler (or in a heat proof bowl over a saucepan), stirring continuously until smooth.
Using a knife or spatula spread the chocolate mix over the surface of the rice crackers.
Place in the fridge until the chocolate sets then store in an airtight container - if you're a hot climate best to store the container in the fridge.
It's as simple as that. And the result is a healthy and incredibly delicious snack!
