Dark chocolate covered rice cakes

I got totally hooked on these tasty little treats while living in the UK some years ago, where they sell them in the supermarket. I recently saw them in an Australian health food store at the exorbitant price of $5 for six rice crackers - so I created my own cheaper, and no doubt, healthier version.



Ingredients
  • 1 packet of thin rice cakes (I used the brown rice ones)
  • 100gm dark chocolate (I used Lindt 70%)
  • 1 small tablespoon butter

  • Method
  • Spread the rice cakes out on a large cutting board or tray in preparation.
  • Melt the chocolate and butter in a double boiler (or in a heat proof bowl over a saucepan), stirring continuously until smooth.
  • Using a knife or spatula spread the chocolate mix over the surface of the rice crackers.
  • Place in the fridge until the chocolate sets then store in an airtight container - if you're a hot climate best to store the container in the fridge.

  • It's as simple as that. And the result is a healthy and incredibly delicious snack!
