Date and Cashew Bites
Whether you are fueling up before hitting the gym or taking a midday snack break, protein-rich snacks are a tasty and efficient way to keep on going.
This nut and dried fruit combo has no sugar and no refined carbs. Dried fruit is more complex than fresh fruit and, combined with nuts, not only adds texture but offers a variety of essential vitamins and minerals.
Ingredients:
For the bites:
¾ cup raw unsalted cashews
10 Medjool dates, pitted
½ cup unsweetened cacao or cocoa powder
1 teaspoon hemp seeds
For the covering (optional):
2-3 tablespoons cacao or cocoa powder
Method:
Soak the cashews in ¼ cup water for 10 minutes.
To a food processor, add the cashews including the soaking water, dates, cacao and hemp seeds. Process the ingredients until they form a firm dough, for about 2 minutes.
Remove the dough and form the bite-size balls by rolling the dough between moistened hands. Then roll the balls in additional cacao.
Refrigerate the bites for about 20 minutes before serving, so they become more firm. You can also freeze the bites for future use.
