Gluten Free Mulberry and Coconut Muffins

These quick muffins have juicy mulberries and tasty coconut that make them a moist and fluffy treat. They are gluten, lactose and refined sugar free and taste great warm, refrigerate and freeze well.

They have high concentrations of iron and vitamins A, C and K. They also contain the same type of antioxidant as dark skinned grapes, fibre, potassium and calcium.

These nutrients and vitamins aid with digestive, skin, hair, nail, vision, cardiovascular, heart and metabolic health. They also reduce cholesterol and the risk of strokes.

Desiccated coconut is cholesterol free and contains fibre, which is good for digestive health and maintaining blood sugar levels. It also has iron, for red blood cell production and transporting oxygen around the body.

It also contains manganese, copper and selenium. Both manganese and copper aid in collagen production, that keeps connective tissues such as skin, tendons, bones and teeth healthy. Copper, an antioxidant, is said to help prevent osteoarthritis, osteoporosis and arthritis.

The body uses selenium for healthy thyroid and immune function.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: 6

Ingredients
3 eggs
1/4 cup oil (I used olive oil)
1/4 cup honey
1/3 cup milk (lactose free)
1 teaspoon vanilla essence
1/2 cup desiccated coconut
1/2 teaspoon baking powder
1 cup mulberries

Method
  • Preheat an oven to 180 degrees. Line a six slot muffin tray with patty tins.
  • Beat the eggs, oil, honey, milk and vanilla essence until combined.
  • Add the desiccated coconut and stir until combined.
  • Add the baking powder and stir until combined.
  • Stir in the mulberries.

  • Pour the batter into the muffin tins.

  • Bake for 20 minutes until brown on top and a skewer comes out clean.
  • Cool and eat warm or cold.
