Healthy Banana Bread

I love my coffee; maybe too much! And it's hard to drink a cup of coffee without having some treat to go with it. For me, a sweet but healthy bread or a simple pound cake will do, like my healthy banana bread.



Ingredients

3 very ripe bananas
2 eggs, at room temperature
200g of whole-wheat flour
2 tablespoons of natural unsweetened yogurt
1 tablespoon of coconut oil, melted
1/2 a teaspoon of baking soda
A pinch of salt
3 tablespoons of coconut sugar
1 teaspoon of cinnamon

Method

  • Preheat your oven to 190*C.
  • In one big bowl add the bananas and mash them with a fork. Add the eggs, melted coconut oil, yogurt, and mix with a hand mixer or a wooden spoon.



  • Add the dry ingredients and mix just until everything is fully combined.



  • Don't overmix, otherwise, your bread will become tough when baking.



  • Grease your bread pan with melted coconut oil and pour the batter in.
  • Bake for 50 minutes, or until a toothpick comes out clean.
  • Let cool completely then enjoy :)
