For all you carrot and tomato lovers, here is a great juice combo with lots of health benefits. Once you taste this delicious juice, you will make it every time you feel thirsty. I love all types of juice, especially when it is colourful.



Usually, this makes a refreshing morning drink for me and so I call the juice my sunshine glow juice. Everyone wants their skin to glow and loves to have flawless skin; this juice will do the job for you. But don't expect it to be an instant process, it will take time.

Now to the health benefits of carrots and tomatoes. Carrots are one of the most widely used and enjoyed vegetables in the world. This root vegetable is a rich source of beta-carotene, anti-oxidants and fibre. Carrot also has a good amount of vitamin A, vitamin C, vitamin K, pantothenic acid, folate and iron.



Carrot is good for health problems like cholesterol, anemia, constipation, poor vision, low immunity, fertility, ulcers etc. Carrot juice also helps to improve the quality and quantity of a mother's milk. Drinking carrot juice regularly during pregnancy helps to reduce the risk of jaundice in newborns. Vitamin C and other nutrients in carrot juice will nourish the skin, preventing dry skin and blemishes.

Tomatoes are rich in moisture, phytonutrients, vitamins, minerals and the organic acids like citric and malic acid, that are responsible for the characteristic flavour of tomato. The tomato seed and skin is a great source of fibre and the flesh part is rich in the antioxidant lycopene.



Tomatoes are good for digestive problems, heart health, bone, teeth and skin health, body detox, and anemia. Eating tomatoes with olive oil will increase the lycopene absorption.

Now for the sunshine glow juice recipe.

Preparation time: 20 minutes

Ingredients
2 carrots
3 tomatoes
1 lemon
1/4 cup apple cider (optional)
1 cup water
Sugar as required

Method
  • Wash the tomatoes in cold water and chop into small pieces. Put in a blender. Add a little sugar and blend well to make a smooth juice. Transfer to a bowl.



  • Now peel the carrot and wash in cold water. Cut it into small pieces.Put it in the blender. Add apple cider and sugar. Blend well to make a smooth paste. Then add water and blend again to mix well.



  • Strain the carrot juice into the tomato juice. Press the pulp with a spoon to take out all the juice from the carrot.



  • Now juice a lemon and add it to the tomato-carrot juice. Stir and mix well.



  • The glow juice is ready. Transfer to a serving glass and enjoy.

  • Apple cider is optional. Add more water if you are not using apple cider. Also, add sugar according to your taste.
