Homemade chocolate
This chocolate is quick, easy to make and tastes delicious! You can make it at home or while traveling; all you need is 4 ingredients and a fridge/freezer. Add nuts, dried fruit or flavouring to suit your taste buds.
It is
gluten, lactose and refined sugar free, vegan and low FODMAP.
I use cacao which is full of
iron, magnesium and is:
high in antioxidants
helps to stabilise blood sugar
contains dopamine and phenylethylamine which makes you feel good by improving mood.
You can substitute with cocoa for similar, but not as powerful, health benefits.

Preparation Time: 5 minutes (plus time to set)
Serves: 2
Ingredients
1/4 cup cacao or cocoa powder
1/4 cup coconut oil, melted
2-3 tablespoons of maple syrup (or stevia)
1/4 teaspoon vanilla essence
Chopped nuts, dried fruit, chocolate/cacao nibs or flavouring, optional
Method
Combine the cacao, 2 tablespoons of maple syrup, vanilla essence and stir to combine.
Add the coconut oil and stir until it gets thick and smooth.

Taste and add more maple syrup to sweeten if necessary. Mix in nuts, dried fruit, cacao nibs or flavouring at this stage if desired.
Spoon the mixture into ice cube tray or onto baking paper and fold into a rectangle. Refrigerate or freeze until set. The actual time will depend on how thick the mixture is. Freezing will set the chocolate quicker.
