Kale Salad with Garlic Parmesan Dressing

If you thought there was no way to enjoy eating raw kale, think again. This simple salad recipe is a big hit whenever I make it or take it to parties and barbecues; the creamy garlic dressing complements the bitterness of the kale in a spectacular fashion. And it's incredibly easy to throw together in a hurry.

Ingredients
  • 1 bunch of kale
  • 6 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 4 tablespoons sour cream
  • 4 tablespoons finely grated or zested parmesan cheese
  • 2 cloves minced garlic
  • Salt and pepper to taste



  • Method
  • Prepare your kale by washing, drying, and tearing the leaves into bite size pieces, discarding stalks and tough stems.

  • Bite size pieces of kale


  • Prepare your dressing in the salad bowl by whisking all ingredients together until mixed well.




  • For the fun part - the best way to ensure the kale is thoroughly dressed is to add the kale and mix it with the dressing using your hands, gently massaging it through.



  • Serve and prepare to be praised for your ridiculously tasty salad!
