Mediterranean style roasted Roma tomatoes

Bursting with fresh Mediterranean flavours, these roasted Roma tomatoes make a beautiful side dish, snack or party food.



Ingredients
  • 5 ripe Roma tomatoes
  • 1/8 Spanish onion, chopped finely
  • 1 garlic clove, minced
  • 4 black olives, pitted and chopped roughly
  • 40gm feta cheese crumbled
  • 1 tablespoon fresh or dried herbs (basil and oregano work well)
  • 1 tablespoon pine nuts
  • Pinch of dried chilli
  • Salt and pepper to taste



  • Method
  • Preheat the oven to 180 degrees.
  • Cut the tomatoes in half lengthways and scoop out the seeds with a teaspoon.
  • Add the other ingredients to a small bowl and mix well to create the stuffing.



  • Place the scooped out tomatoes on a baking tray lined with baking paper and stuff with the mix.



  • Bake for 20 minutes or until the tops are golden brown.
  • Serve and enjoy.
