Mediterranean style roasted Roma tomatoes
Bursting with fresh Mediterranean flavours, these roasted Roma tomatoes make a beautiful side dish, snack or party food.
Ingredients
5 ripe Roma tomatoes
1/8 Spanish onion, chopped finely
1 garlic clove, minced
4 black olives, pitted and chopped roughly
40gm feta cheese crumbled
1 tablespoon fresh or dried herbs (basil and oregano work well)
1 tablespoon pine nuts
Pinch of dried chilli
Salt and pepper to taste
Method
Preheat the oven to 180 degrees.
Cut the tomatoes in half lengthways and scoop out the seeds with a teaspoon.
Add the other ingredients to a small bowl and mix well to create the stuffing.
Place the scooped out tomatoes on a baking tray lined with baking paper and stuff with the mix.
Bake for 20 minutes or until the tops are golden brown.
Serve and enjoy.
