Mushrooms that zing

I love it when I get to the end of the week and have a surplus of one particular vegetable, as it forces me to get creative in the kitchen and find a way to make that one vegetable a star on the plate; this week, it was button mushrooms.

Ingredients
  • Button mushrooms quartered- I had two thirds of a brown paper bag full
  • 3 tomatoes diced
  • 2 garlic cloves chopped roughly
  • 1 red chilli chopped finely
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • Zest of 1 lemon and juice of half
  • Half a bunch of parsley chopped
  • Olive oil
  • Salt and pepper to taste



  • Method
  • Add enough olive oil to a heavy based pan to cover the bottom and heat on medium.
  • Add tomatoes, chilli, garlic, thyme, and a healthy dose of salt and pepper. Continue cooking on a medium heat until tomatoes start to break down.



  • Add the mushrooms and cook gently for ten minutes.
  • Just prior to turning the heat off and serving, add the lemon zest, juice and most of the parsley.
  • Garnish with parsley and serve.
