Pear and oat muffins
These pear and oat muffins are easy to make and a tasty addition to increase fibre into your diet. They are good straight out of the oven, store and freeze well.

Serves: 12
Prep time: 15 mins
Cooking time: 20 minutes
Ingredients
1 1/2 cups self-raising flour
1 /2 cups oats
1/2 cups sugar or 1 ripe banana (mashed)
1 teaspoon cinnamon
3 pears (grated or thinly diced)
1 cup milk (lactose free or nut milk)
1 egg
50g butter (melted) or 1/4 cup olive oil

Method
Preheat the oven to 180C.
Mix together the flour, sugar, cinnamon, oats, pears in a bowl.
Make a well in the centre and add milk, egg and butter. Stir.
Divide the mixture into a lightly greased muffin tray.
Bake for around 20 minutes.
Cool on a wire rack.
