Pine lime mocktail
This is a quick, refreshing and delicious tasting healthy mocktail. It is great if you are craving a healthy cocktail. I hope you enjoy it as much as I do!

Serves: 4
Ingredients
2 cups frozen pineapple
1 lime, juiced
1/2 cup coconut milk, chilled
1 cup ice
4 strawberries or pineapple wedges to serve (optional)
Method
Blend pineapple and coconut milk for 2 minutes.
Scrape down the sides with a spoon and blend for another 3 minutes until smooth.

Add ice and lime juice and blend for 1 minute.

Serve immediately with a cut strawberry or pineapple wedge on the rim of the glass.
