Quick and Easy Chicken Noodle Soup

This soup is very easy to make, is delicious and perfect for the cold weather, or when you're under the weather.



Ingredients
2 small organic chicken thighs
1 onion
1 garlic clove
1 stalk of celery
2 carrots
2 tablespoons of fresh parsley
1 tablespoon of dried vegetables
50g of thin soup noodles

Method

  • The only thing we have to do is to prepare all the ingredients and put them in to cook. That takes only 5 minutes and then we wait.
  • Clean and take the skin off the chicken thighs. Put them in the pot. Peel the onion and garlic, slice the celery and carrots and chop the parsley.
  • Add every ingredient to the pot, cover with 3L of water and bring to a boil.



  • When it starts to boil, turn the heat to low and let the soup simmer for 30 minutes approx. until the chicken is cooked through.
  • Take the chicken out and shred it. Add the shredded chicken back to the pot, add more parsley if you want and add the noodles.
  • Take the onion and garlic out of the pot and cook the noodles according to the package instructions. Serve hot.
