Quick Tip 97 The perfect roast

Roasted veggies are an all-round winner. Healthy, filling, relatively cheap and easy to make, they also pair well with almost any meal, and can be spiced or tossed with herbs to create a range of different flavours.

As a general rule, preheat oven to 200C, scatter vegetables over a lined baking tray and drizzle with oil.

  • Capsicums - large slices, 25 mins
  • Tomatoes - in halves, 25 mins
  • Eggplant - in 5cm chunks, 30 mins
  • Onions - in 6 wedges, 45 mins
  • Parsnips - in 5cm chunks, 45 mins
  • Potatoes - in 5cm chunks, 45 mins
  • Sweet potatoes - in 5cm chunks, 45 mins
