Quinoa Salad with Red Cabbage

Salads are delicious in the summer time, and can be very filling. There are endless varieties of salad; today’s salad is without greens, just vegetables and quinoa. If you haven’t tried quinoa before, I really recommend you to do, it’s tasty and so healthy.



Ingredients

2 small carrots
100g of cooked quinoa
50g of red cabbage
30g of feta cheese
10 cherry tomatoes
1 cucumber
3 radishes

  • Start by preparing all your ingredients. Wash and cook the quinoa according to packet directions.
  • Cut the carrots julienne, slice the radishes, cut the tomatoes in 2, slice the cabbage, and cut the cucumber into little cubes.
  • Add all the ingredients into a big bowl. Add the cooked quinoa and the cheese and stir the salad.
  • Prepare the dressing.

  • Dressing

    2 tablespoons of extra virgin olive oil
    The juice from 1/2 a lemon
    Salt
    Pepper
    1/2 a teaspoon of garlic powder (or 1 fresh clove, minced)
    Chili flakes (optional)

  • Add all the ingredients into a small bowl and stir.
  • Pour the dressing on top of the salad only when you are ready to serve it (to prevent sogginess).
