Rainbow Salad in a jar

Prepare this clever salad several days ahead for work, or to take on an outdoor picnic. This is the perfect time-saving technique to keep your lunches super healthy, fresh and delicious. The best part is that the dressing sits at the bottom of the jar, so that the greens at the top do not get soggy and limp.

Ingredients:

1 tablespoon salad dressing
1 tablespoon chopped cabbage
1 tablespoon sunflower seeds
1 tomato
1 cucumber
1 capsicum
1/2 cup rocket

Rainbow Salad


Method

  • Pour your favorite salad dressing into the bottom of a jar. I used a simple lemon and garlic vinaigrette.

  • Salad dressing at the bottom so that the greens do not get soggy and limp


  • Place a layer of the larger vegetables (chopped cabbage or cucumber) at the bottom of the jar sitting in the dressing.

  • Place the next layer of vegetables


  • Place the next layer of vegetables into the jar followed by the next layer of vegetables, sprouts, seeds, nuts, cheese or beans. Anything you like really.

  • Add another layer of vegetables


  • The final layer should consist of light weight greens or lettuce which can be easily damaged. You can use any type of lettuce for this layer, but we have lots of yummy rocket growing, so I used that.

  • Add the next layer


    Gently add the greens


  • Seal the jar and store it in the fridge. When you're ready, just tip it into a bowl to add a some rainbow freshness to your next picnic or weekday lunch on the road. Enjoy.
