Simple Mini Meatloaves
Meatloaf is quite a popular meal because it doesn’t require much work in the kitchen, and could be saved for the next day. I find mini meatloaves even more appealing because you don’t have to cut them into the portions; just grab a couple or three and make a serving. Also, mini meatloaves look kind of cute on a plate.
I’ve used pork meat as the base in this recipe but feel free to use other kinds of meat that you prefer. Mini meatloaves could be eaten for lunch or, if paired with a salad or vegetables, for dinner.
Preparation time: 15 minutes
Cooking time: 25 minutes
Makes: 12 meatloaves
Ingredients:
600g ground pork (or other meat you like)
1 medium carrot, shredded
2 celery stalks, chopped
3 tablespoons chopped fresh parsley
Salt and ground black pepper to taste
½ teaspoon ground cumin
1 large egg, slightly beaten
1 tablespoon olive oil
Method:
Preheat the oven to 200°C and prepare a muffin (cupcake) tin. If using low fat meat, you might want to grease the tin with the oil.
Add olive oil to the heated medium sized skillet and then add the carrot and celery.
Cook the veggies for about 5 minutes. Once they are done, place them into a bowl to let cool.
Add the parsley, ground meat, salt, pepper, cumin and egg to the veggies. With your hands or using a large wooden spoon, mix well all the ingredients.
Fill the muffin tin with the meat filling.
Bake the meatloaves for about 25 minutes or until they are cooked all the way through.
