Spiced Chickpeas

This recipe is very simple and super tasty. The spiced chickpeas are rich in nutrients and make a great healthy snack option, keeping you full between meals. The garbanzo beans (another name for the chickpeas) contain high amounts of fibre, protein and iron.



Cooking time: 40 minutes
Makes: 9 servings (¼ cup each)

Ingredients:
¼ cup olive oil
½ tablespoon chili powder
2 tablespoons curry powder
¼ teaspoon garlic salt
2 cans of chickpeas, rinsed, drained and patted dry

Method:
  • Preheat the oven to 200°C and line a baking sheet with parchment paper.
  • In a large bowl, combine the olive oil, chili powder, curry powder and salt.



  • Add the chickpeas to the oil mixture and mix all the ingredients.




  • Spread the chickpeas on the baking pan. Cook the chickpeas for 40 minutes or until crisp, stirring every 10 minutes.



  • After cooking, allow the chickpeas to cool down.



  • Store the spiced chickpeas in an airtight container, at room temperature, for up to 3 days.
