Spicy Vegetarian Burgers
Chickpeas are a popular meat replacement with vegetarians. Unlike meat - especially red meat, they are cholesterol free and are often added to heart-healthy protein meals.
In addition, chickpeas are a prebiotic food which acts like fuel for good bacteria, contributing to a healthy microbiome that defends your system against toxins you might encounter from the environment or animal products.
These vegetarian patties can be served as a traditional burger, or on a slice of whole-grain bread, or even with vegetables.
Preparation time: 10 minutes.
Cooking time: 18-20 minutes.
Makes: 4 -6 servings
Ingredients:
1 small carrot
175g chickpeas
1 tablespoon whole-grain flour
½ red pepper
1 spring onion, chopped
1 ½ tablespoon tahini
2 teaspoons lemon juice
¼ teaspoon ground cumin
Pinch cayenne pepper
1 tablespoon chopped fresh parsley
¼ teaspoon sea salt
Freshly ground black pepper to taste
2 tablespoons toasted sesame seeds
1 egg white, lightly beaten
Sunflower oil for cooking
Method:
Put the carrot in a food processor and process until finely chopped.
Add the next 9 ingredients, starting with the chickpeas and finishing with the parsley. Pulse the ingredients to combine.
Transfer the mixture to a bowl and season it with salt and black pepper.
Stir in the sesame seeds and egg white to bind.
Form the mixture in your hands into 4-6 patties.
Heat the oil in a frying pan over medium heat and then add the patties.
Cover the frying pan and cook the patties over low-moderate heat for about 10 minutes, until the bottoms begin to brown.
Flip patties and cook them, covered, for another 10 minutes or until golden.
Serve the burgers with mixed veggies or, simply, top them with chopped fresh parley and a slice of lemon.
