Strawberry Quinoa Breakfast

If you like to eat oatmeal for breakfast, you might want to replace it with quinoa once in a while. Quinoa is a complete vegetarian protein that satisfies hunger and keeps us full for a while. One cup of cooked quinoa contains 8 grams of protein while the same amount of rice contains only 5 grams of protein, and oatmeal contains only 6 grams of protein. Having quinoa for breakfast is one of the easiest ways to start the day on the right foot.



Preparation time: 10 minutes
Cooking time: 20 minutes
Makes: 2 servings

Ingredients:

For the quinoa:
½ cup rinsed and drained quinoa
½ cup water or plant milk
Dash of salt
Dash of cinnamon

For the topping:
1 cup sliced fresh strawberries
2-3 tablespoons chopped almonds
Maple syrup or honey, optional

Method:
  • In a small saucepan, combine the quinoa, water, salt and cinnamon.


  • Bring the mixture to boiling and reduce the heat. Simmer, covered, for 15 minutes or until the water is absorbed. Remove quinoa from the heat and let it stand for 5 minutes.


  • When serving, top the quinoa with the strawberries, and almonds. Add the sweetener, if desired.
