Strawberry Quinoa Breakfast
If you like to eat oatmeal for breakfast, you might want to replace it with quinoa once in a while. Quinoa is a complete vegetarian protein that satisfies hunger and keeps us full for a while. One cup of cooked quinoa contains 8 grams of protein while the same amount of rice contains only 5 grams of protein, and oatmeal contains only 6 grams of protein. Having quinoa for breakfast is one of the easiest ways to start the day on the right foot.
Preparation time: 10 minutes
Cooking time: 20 minutes
Makes: 2 servings
Ingredients:
For the quinoa:
½ cup rinsed and drained quinoa
½ cup water or plant milk
Dash of salt
Dash of cinnamon
For the topping:
1 cup sliced fresh strawberries
2-3 tablespoons chopped almonds
Maple syrup or honey, optional
Method:
In a small saucepan, combine the quinoa, water, salt and cinnamon.
Bring the mixture to boiling and reduce the heat. Simmer, covered, for 15 minutes or until the water is absorbed. Remove quinoa from the heat and let it stand for 5 minutes.
When serving, top the quinoa with the strawberries, and almonds. Add the sweetener, if desired.
