Tamari mix homemade healthy protein snack
A tasty homemade snack, this protein mix is packed full of healthy fats, fibre, and essential vitamins and minerals including iron, calcium, magnesium and vitamin B6. It is incredibly simple to make and can be stored in an airtight jar for several weeks. Eat as a snack or sprinkle on top of salads, bakes, and rice dishes.
Ingredients
1 cup almonds
1/2 cup sunflower seeds
1/2 cup pepitas (dried pumpkin seeds)
1 teaspoon olive oil
1 generous tablespoon tamari (wheat free soy sauce)

Method
1. Preheat oven to 120 degrees.
2. In a medium sized bowl whisk together the olive oil and tamari.
3. Add the nuts and seeds and mix together until everything is coated with the liquid. If you have excess liquid at the bottom of the bowl add more seeds. Leave for ten to twenty minutes to allow the solids to absorb the liquids.
4. Spread the mix evenly and well spaced onto a baking tray lined with baking paper and bake in a low oven for twenty minutes.
5. Allow mix to cool fully on the tray before transferring to a storage container (for maximum crunch).
Tips and variations
The only place it can really go wrong is if you have excess liquid when you spread it on the trays - you'll end up with a soggy version. If you notice lots of little drops of liquid between the mix on the tray, gently soak it up with some paper towel.
To spice things up, you can whisk in some powdered cumin, coriander and chilli with the olive oil and tamari.
