This delicious and healthy slice is a great way to increase your vegetable intake. It can be served for brunch, lunch or as a side at dinner. It is low FODMAP and can be made gluten and lactose free. Enjoy!

Health benefits
A diet high in different types of vegetables can reduce the risk of cancer, cardiovascular disease and diabetes. This slice contains red capsicum (a fruit) and three vegetables, with surprising benefits:
  • Red capsicums contain lycopene, an antioxidant that reduces cancer risk and maintains a healthy heart.
  • Sweet potatoes and carrots have betacarotene, which converts to vitamin A, to maintain healthy mucous membranes and eyes.
  • Zucchini is full of fibre for gastrointestinal health and high levels of magnesium for maintaining blood pressure.

    Preparation Time: 5 minutes
    Cooking Time: 25 minutes
    Serves: 16 portions

    Ingredients
    6 eggs
    3/4 cup self raising flour (gluten free or brown rice flour, if required)
    Salt and pepper, to season
    200g grated cheese (lactose free, if required)
    2 zucchini, grated (or 1 medium eggplant)
    1 large carrot, grated
    1 small sweet potato, grated
    1 small red capsicum, diced

    Method
  • Preheat the oven to 200 degrees. Line a 20 x 30 cm lamington tray with baking paper.
  • In a bowl, mix the vegetables and cheese. Season with salt and pepper, if desired.

  • Beat the eggs and flour. Add to the vegetable and cheese mix and stir to combine.
  • Pour the mixture into the baking dish and bake for 20 - 25 minutes until golden and set.
